Our Mission
La Petite Souris is a French-inspired bakery that melds the techniques of classic pâtisserie with the fun of American-style desserts. Our mission is to provide the metro Denver community with a smooth and cheerful bakery experience designed to make you smile.
Like French patisseries, we implement tried and practiced techniques and use only the freshest produce and quality ingredients. We value a blend of functionality and style. At the same time, the last word we would use to describe ourselves is unapproachable! We tailor the moments you choose to spend with us to brighten YOUR day. We can’t wait to help you savor your celebrations, holidays, and just-because pick-me-ups.
Our Story
Haley MacArthur has been baking for celebrations and weddings for the past three years. She has expanded her skillset by completing courses at the Cambridge Culinary School of Arts, learning modern cake decorating techniques, studying textbooks from the best pastry chefs in the world, and completing advanced online pastry courses instructed by chefs like Antonio Bachour.
Haley’s goal of opening a bakery led her to some of her favorite research—sampling offerings from other bakeries! She and her husband, Jon, visited incredible patisseries across the US. (If a perfect, flaky French croissant isn’t a taste of heaven, what is?) But as amazing as these places are, Haley and Jon often came away feeling as though there was something missing. The offerings were so fancy, the flavors so posh, it was intimidating to take the pastry out of the box!
Haley and Jon also visited traditional American bakeries. There they found familiar flavors they loved from their childhoods. These bakeries provided a wonderful sense of nostalgia but often offered goods that were too sweet, overly processed, or not fresh. They lacked the precision and attention to detail that French pâtisseries bring to the table.
Why draw a line between these two bakery styles? Haley is obsessed with French baking and loves employing its techniques to create unique but approachable flavors that remind her of her American childhood. Little memories often feel the most precious in the long run, and La Petite Souris hopes to help you cherish yours!
